Beecher’s Handmade Cheese

Beecher's Handmade Cheese Beecher's Handmade Cheese
During the obligatory visit to Pike Place Market (post-Victrola), we wandered around and found this place – packed with people, waiting to pounce when they brought out another tray of their penne and cheese.

We tried both the “Mariachi Mac & Cheese” and their traditional Mac & Cheese – and both were good. Were they worth waiting 20 minutes for? Probably not. But they were stick-to-your-ribs gooey and a nice treat on a cold, wet October day in Seattle. Obviously, regular patrons who love this stuff and come to the market just for it would argue with me, but there are lots of Mac & Cheese recipes out there that you could make at home with different exotic cheeses that would be better.

Still, not crazy expensive, a nice snack, and if I were there again and walking by when the tray came out of the oven, I’d have a hard time just walking by…
